Guided by chef and naturopath Eleonore of Maryse Végétale, this immersive gut microbiome cooking retreat explores the living wisdom of food—how it heals, restores balance, and awakens vitality from within.
At our off-grid retreat sanctuary, nourishment becomes a sensory ritual. Each day, you’ll gather vegetables and herbs from our permaculture gardens, learn anti-inflammatory cooking, prepare fermented foods for gut health, craft gluten-free dishes, and knead ancient-grain sourdough that feeds the microbiome. Eleonore’s approach blends culinary art with scientific insight—supporting digestion, calming inflammation, and strengthening the ecosystem of the gut.
This is more than a cooking workshop. It is a wellness retreat in Portugal shaped by our signature philosophy: Sleep, Bathe, Nourish, Move. Deep rest in nature, daily movement practices, mindful eating, river plunges, Finnish sauna, and quiet evenings beneath the stars guide the body into the deep reset it longs for. With no phones and no distractions, Tinhela610 offers a rare digital detox retreat experience—where presence becomes natural again.
Meals prepared together reflect longevity principles inspired by the Blue Zones: slow eating, plant-rich plates, natural fats, ancient grains, fermentation, and the practice of stopping before fullness. Each bite becomes an act of care, connection, and gentle healing. What the land doesn’t provide, we source from trusted local producers—olive oil from ancient groves, honey touched by wildflowers, seasonal fruits, and nutrient-rich vegetables grown in surrounding farms.

10:00–12:30 – Cooking Session I: Garden gathering, anti-inflammatory basics, intuitive preparation
13:00 – Shared lunch + mindful eating practice
14:00–16:00 – Rest, sauna heat, river plunge, journaling, nature immersion
16:00–18:00 – Cooking Session II: Fermentation workshop, gluten-free baking, sourdough rituals, broths & tonics
